Mushroom and Spinach Carbonara on Sweet Potato Noodles

Ingredients
  1. 2 pounds sweet potatoes, peeled and spiralized
  2. 3 large eggs, beaten
  3. 1 cup freshly grated parmesan cheese
  4. ¼ tsp salt
  5. ¼ tsp pepper
  6. 1 tbsp extra-virgin olive oil
  7. 3 strips centre-chopped bacon, diced
  8. 8 ounces mushrooms, sliced
  9. 2 cloves garlic, minced
  10. 5 ounces baby spinach
Instructions
  1. Cook sweet potato noodles in boiling water, gently stirring occasionally, until they begin to soften but are not tender – approximately 1-3 minutes. Reserve ¼ cup of starchy cooking water and drain the remaining water. Turn off the stove and return noodles to the hot pot.
  2. In a small mixing bowl, combine the reserved water, eggs, parmesan, salt and pepper. Pour the sauce over the noodles and toss until they are evenly coated.
  3. Heat olive oil in a large skillet over medium heat. Cook the bacon and mushrooms, stirring frequently, until the liquid from the mushrooms has evaporated and they begin to brown – about 6 to 8 minutes.
  4. Add the garlic and cook for a minute or until fragrant. Add the spinach and cook for a minute or two, until the spinach wilts.
  5. Toss the vegetables with the noodles, top with a generous grinding of pepper and serve!

Ingredients
  1. 1 medium sweet potato, peeled and spiralized with the smallest noodle setting
  2. 2 tbsp coconut oil, divided
  3. 1 tsp garlic powder
  4. 2 eggs
  5. ¼ cup egg whites, divided
  6. Salt and pepper to taste
Instructions
  1. Trim the sweet potato noodles so that they are not too long.
  2. In a medium-sized pan over medium heat, melt one tbsp. of coconut oil. Add the sweet potatoes, garlic powder, salt and pepper and cook until tender, 3-5 minutes. Transfer to a bowl
  3. Turn down heat to medium low and melt ½ tsp coconut oil. Place half of the sweet potato mixture into the pan and form a nest-like shape with a hole in the centre. Pour 2 tbsp. of egg whites over the sweet potatoes and crack and egg in the centre and cook for 4-8 minutes, or until they are cooked to your preference.
  4. Repeat step 3 with the remaining ingredients and serve immediately.

Sweet Potato, Kale and Bacon Quiche

For the crust
  1. 2 cups plain flour, sifted
  2. ½ tbsp. sugar
  3. 1 tsp salt
  4. 1 large egg, lightly beaten
  5. ½ tsp white vinegar
  6. ¼ cup ice cold water
  7. ¾ unsalted cold butter (cut into cubes)
  8. 1 egg and a few drops of water, beaten (for brushing)
For the filling
  1. 6 slices of bacon, chopped
  2. 1 small sweet potato, spiralized
  3. 2 cups kale, chopped
  4. 2 garlic cloves, minced
  5. 6 large eggs
  6. 1 ½ cups heavy cream
  7. 1 ½ cups freshly grated harvati cheese
  8. ½ tsp pepper
  9. 1/8 tsp salt
Instructions
  1. To make the crust, pulse the flour, sugar and salt in a food processor until just combined.
  2. In a small bowl, whisk together the egg, white vinegar and water.
  3. Add cold butter cubes into the food processer and pulse until the mixture resembles wet sand. Pour in the water/egg mixture and continue to pulse until a dough forms.
  4. Removes the dough from the food processor and form into a ball. Wrap in plastic wrap and refrigerate for half an hour.
  5. Once chilled, roll the dough out and place in a 9-inch tart pan or (deep dish) pie plate
  6. To make the filling, first begin by preheating the oven to 350°F.
  7. Heat a large skillet over medium heat and add the bacon. Cook until crispy and the fat is rendered. Remove with a slotted spoon and drain excess grease on a paper towel. Reserve half of the bacon grease.
  8. Cook the sprialized sweet potatoes in the remaining bacon grease for a minute or two, tossing often. Set sweet potatoes aside in a bowl.
  9. Add a small amount of the reserved bacon grease to the same skillet and add the chopped kale and garlic. Cook until the kale becomes a vibrant green colour and wilts. Remove from the heat.
  10. In a mixing bowl, whisk together the eggs, cream, cheese, salt and pepper. Place half of each the sweet potatoes, bacon and kale into the crust and drizzle the egg mixture over the top. Add the remaining sweet potatoes, bacon and kale and mix altogether gently. Bake for 55-60 minutes or until the top is golden and the centre of the quiche has set. Allow 15 minutes cooling time before serving!
