Avocado Chocolate Mousse

Ingredients
  1. ½ cup organic maple syrup
  2. 2 large ripe avocados
  3. 1 tsp. vanilla extract
  4. ½ cup raw cacao
Instructions
  1. In a powerful high-speed blender or food processor, first add the maple syrup, then the avocado, vanilla and cacao and blend for 30 second.
  2. To create a lighter mousse, add a splash of water or coconut milk. Taste and adjust accordingly.
  3. Transfer to a bowl and allow to set in the fridge for at least an hour before dividing into serving bowls and devouring.

Spiralized Apple Tart

For the crust
  1. 1½ cups pecans (or nuts of choice)
  2. 10 Medjool dates
  3. 1 tablespoon coconut oil
  4. ¼ cup quinoa flour
  5. ¼ cup gluten-free rolled oats
For the apples
  1. 2 large apples, peeled and spiralized
  2. 1 tablespoon lemon juice
  3. ½ cup coconut sugar
Instructions
  1. Grease a tart shell and set aside. Preheat the oven to 350 F.
  2. In a food processor, process the pecans (or nuts of choice) until the mixture resembles coarse sand – if you process too much, you’ll end up with nut butter.
  3. Add the dates and coconut oil and continue to process until a dough is begins to form.
  4. Add the oats and quinoa flour and pulse until a dough is formed.
  5. Press the dough out evenly into the tart pan and bake for 10 minutes until the crust begins to brown.
  6. In a small mixing bowl, toss the spiralized apples with the lemon juice and coconut sugar until the apples are evenly coated in the coconut sugar.
  7. Pour the spiralized apples into the tart shell and return to the oven for a further 25-30 minutes. If the crust begins to brown too quickly, loosely cover the tart with tinfoil and continue to bake.
  8. Remove the tart from the oven and allow to cool for 15-20 minutes before slicing into triangles and serving with your favourite ice cream!

Ingredients
  1. 2 eggs or 1 tablespoon Ener-g egg replacer mixed with 4 tablespoons water
  2. 3/4 cup almond milk
  3. 1/2 cup water
  4. 1 cup white whole wheat flour
  5. 3 tablespoons applesauce
Instructions
  1. In a food processor or blender, pulse all the ingredients until just combined – over-blending will result in a very tough, rubbery crepe. Put in the batter in the refrigerator and allow to chill for at least one hour, or up to 48 hours.
  2. To cook the crepes, heat a crepe pan with a thin layer of cooking spray over medium heat. Pour in an ounce of batter per crepe, swirling the batter around the pan. Cook for 30 seconds and then flip. Cook for a further 10 seconds on the second side before transferring to a serving plate and allowing to cool.
  3. Repeat with remaining batter to make more crepes. You can store the remaining batter in the refrigerator or freezer. Serve with desired toppings and devour.

Sweet Potato Cheesecake Bars

  1. 1 medium sweet potato, peeled and spiralized
  2. 1 box (13.5 ounces) graham cracker crumbs
  3. 1 cup butter, melted
  4. 3/4 cup packed light brown sugar
  5. 1 1/2 cups chopped pecans
  6. 1 cup sugar, divided
  7. 1 teaspoon ground cinnamon
  8. 5 packages (8 ounces each) cream cheese, softened
  9. 5 large eggs
  10. 1 teaspoon vanilla extract
Instructions
  1. Preheat the oven to 350 F and grease a 17x10 inch baking pan.
  2. Combine the graham cracker crumbs, melted butter and brown sugar in a small bowl until the mixture resembles wet sand. Press the mixture into the base of the baking pan.
  3. Combine the pecans, 3 tbsp. sugar and cinnamon in another small bowl and set aside.
  4. Using an electric beater, combine the cream cheese, sugar and vanilla extract for about 2 minutes. Then mix in the eggs, one at a time. Fold in the sweet potato spirals and mix until evenly distributed throughout the cream cheese mixture.
  5. Spread the cream cheese mixture over the graham cracker base and top with the nut mixture.
  6. Bake for 35-40 minutes, or until the centre is set and cool on a wire rack. The transfer to the fridge and chill overnight. Slice into bars to serve.
